I was told to avoid dairy or severely limit milk products. Cream cheese? Dietitian comment: Check with your healthcare team. Find out why you need to limit milk products. Cream cheese is low in potassium and phosphorus and acceptable for most kidney diets.
Has anyone made these with gluten-free flour?
I would try these with half all-purpose flour and half oat, rye, brown rice, millet, amaranth or whole wheat flour for more flavor and fiber and use an unsweetened fruit spread for the jam. Rye flour and cherry fruit spread would be very Russian while oat flour and apricot fruit spread would evoke a Scottish feeling.

These biscuits are delish!! I never had two cups of all purpose flour in the cupboard, so i used 1 cup of rice flour and 1cup of all purpose flour and they tasted like a short bread. Very nice. t t
Since the other review found them a little lacking, I added 1/2 t. each vanilla and almond extracts. That gave the dough some flavor. It was warm in the kitchen so I had to chill the dough in order to roll it out. My boyfriend and I think they're tasty. And yes, make your thumbprint deep so the jam won't run out onto the pan.
I just made these for my unit as a Christmas present. There were none left to bring home. I personally thought the cookie may have been lacking a little something but these were easy to make, looked good and everyone loved them. One tip: make sure your "thumbprint" is pretty deep. If not, the jam may cook over the cookie onto your cookie sheet.
