Lemon Pound Cake

I would love to try, but since my husband is diabetic, could I use sugar substitute, and egg beaters instead of whole eggs? Would it bake the same, and I would assume lower the carb count? Dietitian comment: I believe the egg beaters will work as a substitute for eggs. In some recipe makeovers there are substitutions of healthy oil or applesauce for part of the butter, and a decrease in the amount of sugar. Using a sugar-sugar substitute blend may give better results than a sugar-substitute only. Let us know how your revised cake turns out.

Can you please tell me how much more that increased the phosphorus and potassium values? Dietitian comment: the extra 2 yolks increased the phosphorus by 8 mg per slice and potassium by 1 mg per slice.

This is a high carbohydrate/high sugar dessert and not a great choice if you have diabetes or pre-diabetes. You will notice it is not designated as a diabetes diet recipe and the Helpful hints state not recommended for persons with diabetes. Fortunately there are many other dessert recipes that are suitable for you!

This was an EXCELLENT poundcake. It was very easy to put together and it did rise without any baking powder or soda added. The only thing I added was the zest of one lemon. I also had to bake some additional time to get a clean knife, about 15 minutes. It does also freeze wonderfully.

made this cake and it is very good. will make it again. do you think I could use sour cream instead of milk?Dietitian comment: I believe the sour cream will work as a substitute. Compare with other cake recipes that use sour cream.

I made this cake, but I had to cook it 1hr.30mins. I have an electric oven. So I don't know if that is the reason. I thought the taste was good. My husband also likes it because it was lemon. I was surprised that it acutally raised, without any baking powder or baking soda.
